GLUTEN FREE BUFFALO-STYLE BALLS

I love football and I love buffalo wings. How am I still single? I am the perfect woman! Hello?!?! When I was diagnosed with Celiac's Disease I sadly had to say good-bye to my beloved little wings of buffalo love, as the majority of wings are dredged in flour before frying. I am always playing around in the kitchen to find ways I can still enjoy the dishes I miss most, and after many many trials I came up with, what I think, are some pretty amazing balls. Buffalo Balls that is.... they are packed with buffalo flavor both inside and out and are a healthy gluten free alternative to the everyday buffalo wings.
These little guys are perfect to munch on during the big game.



1 package of lean ground turkey
1 egg
1/4 cup of Parmesan cheese
1 clove of fresh garlic minced
1 TBSP of onion powder
1 tsp of salt
1 tsp of pepper
1 TBSP of mayonnaise
2 TBSP of your favorite buffalo wing sauce
2 scallions minced

RESERVE: 1 cup of buffalo wing sauce (for basting and dipping)

 Combine all ingredients in a bowl and mix well. Roll small amounts of the mixture into little bite-sized balls.
In a large skillet heat 1/4 cup of olive oil brown each ball on all sides until the meat is almost cook through. When the meat is almost done brush some of the buffalo sauce over the balls and let them caramelize.
Remove from pan and plate them up! Serve with the remainder of buffalo sauce and blue cheese or ranch sauce.
